Many Americans eat buckwheat instead of wheat for health

This year, buckwheat noodles were selected along with plant-based protein alternatives, functional caffeine drinks, and healthy ramen noodles. Here's a look at the nutritional benefits of buckwheat.

Buckwheat is one of the foods that are so healthy that it is called a 'raw medicine on the table'. First, it is rich in dietary fiber and protein, and it contains 10g of protein and 5g of dietary fiber per 100g. It is rich in eight essential amino acids, including potassium, folate, magnesium, and fiber, and is also rich in vitamin B groups, which are more nutritious than other grains containing rice or barley. Among the vitamin B groups, vitamin B1 is effective for relieving fatigue, and vitamin B2 is effective for skin health. Buckwheat, in particular, is rich in rutin and contains about 100 mg per 100 g. Buckwheat noodles are also suitable for diet because they are low in calories. Whole Foods Market also predicted that buckwheat will be used and grafted on various foods such as crackers, granola, and noodles. It is expected that several food forms containing buckwheat will emerge instead of flour. However, most buckwheat noodles on the market in Korea may have high calories because they contain a large amount of flour and chemical additives while containing less buckwheat.

Meanwhile, buckwheat is also a common allergy-causing food. There are reports that about 2% of children and adolescents in Korea are allergic to buckwheat. Be careful because eating foods that come into contact with cooking utensils used in buckwheat food may cause allergic symptoms. In particular, it is safe for infants and toddlers who have less completed their immune systems to check for allergic reactions before eating buckwheat.
